Black Bean and Potato Soup

Both hubby and I had to work Christmas Eve so I got everything ready for this soup and when the in-laws arrived they threw it in the pot and by the time we got home, dinner was ready!  Preparation was easy.  Either I put in a little extra jalapeño or it was just a little spicier than I would have liked.  I would definitely make this again, but I have a few changes… I would add some corn and maybe some tomatoes, top it with sour cream and/or shredded cheese.  We had crackers, but I think some cuban bread would be better.


  • 6 cups beef broth
  • 1 can (16oz) black beans, drained
  • 2 potatoes, diced
  • 1 can (4oz) jalapeño peppers, chopped
  • 1/4 cup dried chopped onions
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp ground oregano
  • 1 tsp ground thyme
  • 1/8 tsp ground cloves


Combine all ingredients and cook in a crock pot on low for 6-8 hours or high for 4-5 hours.
