Stuffed Peppers

My husband is infatuated with Dr. Oz.  He tapes the show every. single. day.  The other day, he said there was good recipe with ground turkey and stuffed peppers he wanted to try.  He had already deleted the show, but he said he copied everything on his phone.  Well… he copied ingredients and nothing else.  So, I decided to wing it.  Later, I found the recipe on and it was completely different (including ingredients that the hubs left out), but I actually think my creations turned out pretty good.  :-)


  • 4-5 large peppers (green, red, yellow & orange)
  • 16 oz ground turkey
  • 16 oz chunky salsa
  • 1 cup cooked brown rice (we steamed gluten-free rice)
  • 1 medium yellow onion, chopped
  • 2 avocados, sliced
  • 2 cups baby spinach, chopped
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground pepper
  • 1/4 cup finely chopped basil
  • plain Greek yogurt (we prefer Chobani)


Brown the turkey and drain.   Mix turkey, rice, onions, salsa, garlic, pepper, basil and chili powder in a bowl.  Remove tops off the peppers (I also cut them in halves) and stuff with the mixture.  Add sliced avocado & spoonful of yogurt.  (I added some shredded cheese to a few of them too).  The leftovers were perfect for lunch the next day.
