Let me start off by saying… wow! This pizza was absolutely delicious. Tons of great veggies on naan flat bread with yummy goat cheese, and it was super easy to make! I got the recipe from Whole Foods, but rather than grilling I sautéed the veggies and baked the pizza. There are tons of possible toppings – I’d love to hear other suggestions!
- 1 medium eggplant
- 2 zucchini or yellow squash
- 1/4 cup extra virgin olive oil
- 6 pieces Naan
- 1 1/4 cups marinara sauce
- 1 cup mozzarella cheese
- 4 0z goat cheese, crumbled
- salt & pepper
PREPARATION:
Slice the zucchini, squash & eggplant. Season with salt & pepper and saute in olive oil until tender (about 8 minutes). Brush naan with olive oil then spoon on marinara sauce. Top sauce with veggies and both cheeses. Place pizzas on a cookie sheet (or directly on the rack) and bake at 350 until crispy & cheese is melted (about 10 minutes). Cut into wedges and serve.
