Spinach, Sun Dried Tomato & Goat Cheese Pizza

Ok, let me start by saying I’m not a huge pizza fan – but since I tried and fell in love with Grilled Veggie Naan Pizza with Goat Cheese I keep trying new variations of quick, healthier pizzas.  So easy to make and the combinations and toppings are endless.

INGREDIENTS:

  • thin pizza crust
  • spinach
  • sun dried tomatoes
  • tomato sauce
  • goat cheese crumbles
  • olive oil
  • black olives (optional)

PREPARATION:

Lightly brush olive oil over the pizza crust.  Spoon on some tomato sauce (I didn’t use much).  Cover pizza crust with spinach leaves & sun dried tomatoes.  Sprinkle goat cheese and black olives on top.  Place the pizza crust directly on an over rack and back for about 10 minutes – longer if you desire a crispier crust.  Try it with grilled chicken too!
